GAIL’s has thanked local residents for the “warm welcome” it has received since opening a new bakery in Altrincham.

The bakery, which is located on Shaw’s Road in the unit formerly occupied by Mustard restaurant, has created a total of 18 new jobs.

The new Altrincham bakery is open from 7am-7pm daily.

GAIL’s has expanded rapidly in recent years, particularly in London, where it has built a devout following for its range of artisan sourdough breads, pastries, sandwiches and cakes, as well as its specialty House Blend coffee.

GAIL’s has actually had ties to the region since 2017, when it opened a wholesale bakery in Openshaw in 2017, supplying some of the region’s top restaurants, cafés and hotels.

The history of the company dates back to the early 1990s, when founder Yael (Gail) Mejia served top chefs and food venues.

In 2003, Tom Molnar and a few friends joined Yael’s premium wholesale craft bakery and grew the business organically. The team moved all the baking under one roof in Hendon, north London, and in 2005 they opened its first high-street bakery in Hampstead.

GAIL’s has grown rapidly and now has over 70 sites nationally. A first Northern bakery opened in Wilmslow last month, with a third opening on King Street in Manchester on June 7th, with a further bakery taking over a former bank in Didsbury on June 21st.

A spokesperson for GAIL’s in Altrincham said: “We’ve received such a warm welcome to Altrincham, the team are having such a great time getting to know the locals and we’ve been involved in some great events such as the BID’s coronation activity.”

GAIL’s says it is committed to improving the end-to-end food system, selecting like-minded artisan producers to make the quality ingredients which go into baking.

It also seeks to reduce waste and source sustainably, with its Waste Not range of bread, pantry and pastry products produced by incorporating by-product ingredients from food making processes, like off-cuts from dough and yesterday’s bread.

A sustainable approach has also been taken in the fit-out of the new Altrincham bakery, which has incorporated reused materials including the timber frontage, terrazzo floor and interior light fittings.

Last year, GAIL’s was awarded fourteen Great Taste Awards by the Guild of Fine Foods, the most respected accreditation scheme for artisan and specialty food.
