A new-concept Sri Lankan restaurant is to open in Hale village next week on the site of the former La Vina.
Sigiriya, which will open from Tuesday February 21st, is a new venture from the former manager of the renowned Jumeirah Beach restaurant in Dubai.
Donn Buddhika, a Sri Lankan native, has over 15 years’ experience running restaurants within the Shea Khan Group and most recently helped to transform the reputation of Mughli in Knutsford.
Sigiriya will serve a selection of traditional Sri Lankan dishes “with a contemporary update” and will be the “perfect fusion of Indian and Thai styles”, with all menus created by Buddhika himself.
He said: “I am delighted to open and offer the people of Hale and further afield an insight into the global Sri Lankan cuisine that my family know and love.
“Not only does this feel really personal to me, the fabulous interiors take inspiration from Sri Lankan roots with bendy pipework and a living moss wall.”
The interior of the new Ashley Road restaurant has been created by Katie McCarthy from Style Contracts.
The site has been undergoing its transformation since the closure of tapas restaurant La Vina in October.
Buddhika added: “Following in the traditional Sri Lankan way, we are having the restaurant blessed by Buddhist monks and before any of the cookers can be used a milk blessing will also take place to ensure that good luck and happiness is bestowed on Sigiriya and all staff and customers.”
Sigiriya will also offer bespoke alcoholic and non-alcoholic cocktails designed to order or created by the in-house mixologist menu. There will also be a selection of bespoke blended Sri Lankan teas.
The new restaurant will have an invite-only launch on Friday February 17th, and will open to the public from Tuesday February 21st, 12-3.30pm for lunches and 5-10.30pm for evenings.
